By far our one and only favorite miso, South River Miso Company is now back at One Root Tea. We favor the flavor of this miso as it commands the highest quality standards. For those of you who are unfamiliar, miso is a salty and savory fermented soybean paste most commonly used as a seasoning in soup (for those that want soy free, we have wonderful versions). It is centuries old originating from the Japanese culture, and comes chock-full of health benefits. The unpasteurized miso preserves the beneficial microbes that assist your gut bacteria, therefore wonderful for your digestion and overall physical well being. The 3-year barley is the most popular and supremely nourishing. As cold weather hits, there is nothing better than a warm cup of miso.
Having the honor to live with a Japanese monk, Becca learned that a true miso soup recipe always uses kombu, (a hearty seaweed) and three kinds of miso as a base seasoner in the soup. Choosing a dark, medium and light flavor is the ideal. Add your favorite vegetables, mine are ginger, garlic, daikon radish, zucchini, chives, and (not a vegetable but..) tofu. Topped with gomasio (lightly roasted sesame salt) and voila! Even Becca's 11 year old daughter Mia enjoys miso soup especially during the cold and flu season.
